Three Hacks with Olive Oil

Clover Olive Pride is a pantry essential and you can make aioli, pesto or confit with these hacks!

Confit

  • Cloves of garlic
  • Olive Pride Blend
  • Thyme sprigs
  • Saucepot

How To Confit

  1. Add 500ml Olive pride blend to a saucepot and gently heat.
  2. Add in the garlic and thyme and allow to “confit” slowly.
  3. Do not let the oil bubble or heat up too quickly as this will burn the garlic.

Pesto

  • 1 cup Olive Pride
  • Extra virgin olive oil
  • 1 cup Fresh basil leaves
  • 1 clove garlic
  • ½ cup grated parmesan
    handful Fresh parsley
  • Lemon cut in half
  • 1 cup nuts (cashews)
    salt and pepper to taste
  • Blender or pestle and mortar
  • Jar for storing pesto

How To Make Pesto

  1. Place all the pesto ingredients into a blend and blend to your desired consistency. Store in a jar in the fridge.

Aioli

  • Clover Olive Pride
  • Extra Virgin olive oil
  • 1 Egg yolk
  • 2 tsp Lemon juice
  • 1 garlic cloves, finely minced
  • 1 tsp dijon mustard
  • Stick blender

How To Make Aioli

  1. Add to egg yolk, lemon juice, garlic and dijon mustard to a small bowl.
  2. Blend it until well combined, then gradually add in the Olive Pride whilst blending. Store in a jar in the fridge.
