Coconut Chocolate Bites

Crisp on the outside and pillowy within, they take only a few minutes to put together and keep extremely well, perfect texture comes from fluffy sweetened coconut for softness and crunchier unsweetened coconut for more chewiness.

Ingredients:

400g coconut flakes
1 can sweetened condensed milk
1 tsp vanilla essence
2 egg whites
100g dark chocolate chips

Method:

Preheat the oven to 180C and prepare a baking sheet.
In a large bowl, stir together coconut flakes, condensed milk and vanilla.
In a separate bowl, whisk the egg whites to a soft peak
Fold the egg whites into the coconut mixture until just combined.
Scoop 1 tablespoon of the mixture onto your hand and roll into a medium sized ball. Place onto the baking sheet and repeat the process until the coconut mixture is finished.
Bake in the oven for 15 minutes. Remove from oven and allow to cool completely.
Melt the chocolate over a double boiler.
Dip the cookie bottoms into the melted chocolate. Transfer onto parchment paper and allow bottoms to harden.
Finish off by drizzling more chocolate over the top.

Chefs Tip: Careful not to overbake the cookies as they can become dry.
