Coffee Braised Beef Short Ribs

Ingredients:

  • 1.5kg beef short ribs
  • salt and pepper to taste
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup Jacobs Kronung (strongly brewed)
  • 2 cups beef stock
  • 1/2 cup non-alcoholic red wine
  • 2 Tbsp tomato paste
  • 2 Tbsp brown sugar
  • 2 tsp Worcestershire sauce
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • To serve:
  • Creamy mashed potato
  • Fresh parsley, chopped

How To Make Coffee-Braised Short Ribs

  1. Preheat oven to 160°C. Season the short ribs with salt and pepper. Heat the olive oil in a large oven-safe pot over medium-high heat, brown the short ribs in the pot on all sides, working in batches if necessary to avoid overcrowding the pot, then remove the ribs and set aside.
  2. In the same pot, add the onions, carrots, and celery. Cook until softened for about 5 minutes.
  3. Add the garlic and cook for another minute until fragrant.
  4. Return the short ribs to the pot.
  5. Pour in the brewed coffee, beef stock, and non-alcoholic red wine. Stir in the tomato paste, brown sugar, Worcestershire sauce, thyme, and bay leaves.
  6. Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven for 2 – 3 hours, or until the meat is tender.
  7. Once the short ribs are cooked, remove from the oven and serve immediately with mashed potato. Enjoy!
