
Coffee Braised Beef Short Ribs

Ingredients:
- 1.5kg beef short ribs
- salt and pepper to taste
- 2 Tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup Jacobs Kronung (strongly brewed)
- 2 cups beef stock
- 1/2 cup non-alcoholic red wine
- 2 Tbsp tomato paste
- 2 Tbsp brown sugar
- 2 tsp Worcestershire sauce
- 2 sprigs fresh thyme
- 2 bay leaves
- To serve:
- Creamy mashed potato
- Fresh parsley, chopped
How To Make Coffee-Braised Short Ribs
- Preheat oven to 160°C. Season the short ribs with salt and pepper. Heat the olive oil in a large oven-safe pot over medium-high heat, brown the short ribs in the pot on all sides, working in batches if necessary to avoid overcrowding the pot, then remove the ribs and set aside.
- In the same pot, add the onions, carrots, and celery. Cook until softened for about 5 minutes.
- Add the garlic and cook for another minute until fragrant.
- Return the short ribs to the pot.
- Pour in the brewed coffee, beef stock, and non-alcoholic red wine. Stir in the tomato paste, brown sugar, Worcestershire sauce, thyme, and bay leaves.
- Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven for 2 – 3 hours, or until the meat is tender.
- Once the short ribs are cooked, remove from the oven and serve immediately with mashed potato. Enjoy!
