Couscous Salad

The ultimate fuss-free dish that’s full of colour, crunch, and creamy goodness!

 

Ingredients:

For the couscous

  • 1 cup couscous
  • 1 cup hot chicken stock
  • 1 tablespoon olive oil or butter
  • Salt and pepper

Vegetables (cubed):

  • 1 small red bell pepper
  • ½ red onion, diced
  • 1 tablespoon olive oil
  • 1 tsp dried herbs (e.g., thyme or oregano)

For the topping

  • 1 ripe avocado

How To Make Couscous Salad

  1. In a heatproof bowl, combine 1 cup of couscous with a pinch of salt and pepper.
  2. Pour over 1 cup of hot chicken stock, add 1 tablespoon of olive oil or butter, stir briefly, and cover with a lid or plate.
  3. Let sit for 5 minutes, then fluff with a fork.

  4. While the couscous is steaming, dice the red bell pepper and red onion.
  5. In a small bowl, toss them with 1 tablespoon of olive oil and 1 teaspoon of dried herbs (like thyme or oregano) to add flavour.

  6. Add the chopped vegetables to the fluffed couscous and mix gently to combine.

  7. Just before serving, dice the ripe avocado and gently fold it into the salad.
  8. Adjust seasoning with more salt and pepper to taste.
