Couscous Salad
The ultimate fuss-free dish that’s full of colour, crunch, and creamy goodness!
Ingredients:
For the couscous
- 1 cup couscous
- 1 cup hot chicken stock
- 1 tablespoon olive oil or butter
- Salt and pepper
Vegetables (cubed):
- 1 small red bell pepper
- ½ red onion, diced
- 1 tablespoon olive oil
- 1 tsp dried herbs (e.g., thyme or oregano)
For the topping
- 1 ripe avocado
How To Make Couscous Salad
- In a heatproof bowl, combine 1 cup of couscous with a pinch of salt and pepper.
- Pour over 1 cup of hot chicken stock, add 1 tablespoon of olive oil or butter, stir briefly, and cover with a lid or plate.
- Let sit for 5 minutes, then fluff with a fork.
- While the couscous is steaming, dice the red bell pepper and red onion.
- In a small bowl, toss them with 1 tablespoon of olive oil and 1 teaspoon of dried herbs (like thyme or oregano) to add flavour.
- Add the chopped vegetables to the fluffed couscous and mix gently to combine.
- Just before serving, dice the ripe avocado and gently fold it into the salad.
- Adjust seasoning with more salt and pepper to taste.
