
Mini Date Sticky Toffee Puddings

toffee sauce!

Cooking time: 20-25 minutes
Ingredients:
- 225g medjool dates, finely chopped
- 175ml boiling water
- 1 tsp bicarbonate of soda
- 1 tsp vanilla essence
- 175 ml self-rising flour
- 2 eggs
- 85g margarine, softened
- 140ml brown sugar
- 100ml fresh milk
For The Sauce:
- 150g brown sugar
- 50g margarine
- 100ml fresh cream
To Serve:
- Ice cream
How To Make Mini Date Sticky Toffee Puddings
- Preheat the oven to 180°C and grease a muffin tin.
- In a large bowl, add the chopped dates and pour over the boiling water.
- Sprinkle over the bicarbonate of soda and allow to sit for a few minutes.
- In a separate bowl, beat the margarine and sugar together until creamy then add the eggs one at a time, beating well between additions.
- Fold in the flour and milk, being careful not to overmix.
- Fold in the date mixture.
- Transfer the batter into a greased baking pan and bake until risen and firm.
- For the sauce – In a saucepan, combine the sugar, margarine and cream.
- Bring to a boil until the sugar has melted and slightly reduced.
- Serve and enjoy!
