French Toast with Whipped Mascarpone Recipe
In the morning, we are always in a French Toast mood.

Ingredients:
- 8 slices brioche bread
- 2 eggs
- ½ cup milk
- ½ cup cream
- 1 tsp ground cinnamon
- Pinch nutmeg
- ½ tbsp vanilla essence
- Pinch of salt
- 2 tbsp butter
- For whipped mascarpone;
- ½ cup cream
- ½ cup mascarpone cheese, softened
- 2 tbsp icing sugar
- To serve;
- Fresh berries
- Golden syrup/ maple syrup
How To Make French Toast with Whipped Mascarpone
- Make the whipped mascarpone; in a bowl whisk the cream icing sugar with and electric whisk until soft peaks form.
- Fold in the mascarpone and beat until well combined.
- Cover with cling wrap and place in the fridge while you make the French toast
In a shallow bowl, whisk together the eggs, milk, cream, cinnamon, nutmeg, vanilla essence and salt. - Melt the butter in a nonstick pan.
- One slice at a time, soak the bread in the eggs for about 30 seconds on each side.
- Allow to drip then transfer to the pan.
- Fry until golden brown on each side. Repeat until all slices are cooked.
- To serve, top the French toast with a dollop of whipped mascarpone, fresh berries and a drizzle of syrup.
