French Toast with Whipped Mascarpone Recipe

In the morning, we are always in a French Toast mood.

  • 8 slices brioche bread
  • 2 eggs
  • ½ cup milk
  • ½ cup cream
  • 1 tsp ground cinnamon
  • Pinch nutmeg
  • ½ tbsp vanilla essence
  • Pinch of salt
  • 2 tbsp butter
  • For whipped mascarpone;
  • ½ cup cream
  • ½ cup mascarpone cheese, softened
  • 2 tbsp icing sugar
  • To serve;
  • Fresh berries
  • Golden syrup/ maple syrup

How To Make French Toast with Whipped Mascarpone

  1. Make the whipped mascarpone; in a bowl whisk the cream icing sugar with and electric whisk until soft peaks form.
  2. Fold in the mascarpone and beat until well combined.
  3. Cover with cling wrap and place in the fridge while you make the French toast
    In a shallow bowl, whisk together the eggs, milk, cream, cinnamon, nutmeg, vanilla essence and salt.
  4. Melt the butter in a nonstick pan.
  5. One slice at a time, soak the bread in the eggs for about 30 seconds on each side.
  6. Allow to drip then transfer to the pan.
  7. Fry until golden brown on each side. Repeat until all slices are cooked.
  8. To serve, top the French toast with a dollop of whipped mascarpone, fresh berries and a drizzle of syrup.
