1. Peel and finely grate the ginger. Squeeze it through muslin or a fine sieve to extract 2 tablespoons of juice. 2. Divide the ginger juice between two heatproof serving bowls. 3. Combine the milk, milk powder and sugar in a saucepan. Heat gently, stirring until dissolved, to approximately 75-80°C. Do not boil. 4. Pour the hot milk directly into the ginger juice from a slight height. Do not stir. 5. Leave the bowls completely undisturbed for 10-15 minutes, or until delicately set. 6. Serve warm or refrigerate before serving.
