Green Spinach Pesto Pasta

Serves: 4

Ingredients:

  • ¼ Cup Chopped sundried tomatoes
  • ½ ricotta cheese
  • 3-4 Grilled chicken breast, sliced
  • 500g Linguine pasta, cooked
  • 2 Cups Baby spinach, rinsed
  • 1 Cup Fresh basil leaves, rinsed
  • 3 Tbsp Toasted sunflower seed
  • ¼ Cup Olive oil
  • 1 Garlic clove
  • Squeeze lemon juice
  • salt and pepper, taste

How To Make:

  1. Blend all the ingredients for the pesto in a blender or food processor until smooth.
  2. In a large saucepan or pot, add the pasta, ricotta cheese, chicken pieces, tomato and pour the pesto over.
  3. Toss well to combine and coat the ingredients with the pesto.
  4. Add a dash of water if you want to loosen the sauce slightly.
  5. Season with salt and pepper before serving.
