Hollywood Popcorn Chicken with Sweet & Smoky Glaze​

You can’t watch a movie without popcorn, but we’re giving this cinema classic a Hollywood upgrade!

Ingredients:

For the chicken

  • 500 g chicken breast, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 tsp garlic powder
  •  1 tsp paprika
  • Salt and pepper

For coating

  • 1 cup cake flour
  •  ½ cup cornflour
  •  1 tsp smoked paprika
  • ½ tsp cayenne pepper
  •  Salt and pepper

Sweet & Smoky Glaze

  •  3 tbsp honey
  •  2 tbsp tomato sauce
  •  1 tbsp soy sauce
  •  1 tsp smoked paprika
  •  1 tsp apple cider vinegar
  •  ½ tsp chilli flakes (optional)

Method:

1. Combine the chicken, buttermilk, garlic powder, paprika, salt and pepper in a bowl. Allow to marinate for 10–15 minutes.

2. In another bowl mix the flour, cornflour, smoked paprika, cayenne, salt and pepper.

3. Remove chicken from the marinade and coat well in the flour mixture.

4. Heat oil in a pot and fry the chicken pieces in batches for 4–5 minutes until golden and crispy. Drain on a paper towel.

5. For the glaze, combine the honey, tomato sauce, soy sauce, smoked paprika, vinegar and chilli flakes in a small saucepan and simmer for 2–3 minutes until slightly sticky.

6. Toss the crispy chicken pieces in the warm glaze until evenly coated.
