Morning-After Cheesy Croissant

Late night last night? Nothing a cheesy croissant can’t fix!

Ingredients:

  • 2 Large croissants
  • 2 Large eggs
  • 2 Slices Clover gouda cheese
  • 4 Thick slices tomato
  • 4 Rashes bacon, cooked
  • ½ Cup Clover cheddar cheese, grated
  • Salt and pepper, to taste
  • Mayonnaise or chutney, to serve
  • Fresh rocket, to serve

How To Make Cheesy Croissant

  1. Bring a non-stick pan to a medium heat.
  2. Sprinkle half the cheese in the pan, butterfly each croissant and plant the inside facedown onto the cheese.
  3. Allow the cheese to brown and turn golden before removing and then repeating with the remaining croissant.
  4. Cook the eggs to your liking as well as the tomato slices before assembling the croissant. Season to taste.
  5. To assemble, spread some chutney or mayo over the base of each sandwich, top with bacon, cooked tomato and then top with egg and the remaining slice of gouda cheese.
  6. Close off the sandwich with added rocket or leave as a open sandwich topped with rocket instead.

Chefs Tip: Not a croissant fan? Replace it with a bagel or your favourite bread roll.
