Pesto Fried Eggs

A quick and easy low calorie, high protein breakfast!

  • 2 Large eggs
  • 1 ½ wheels of feta cheese
  • 2 Tbsp basil pesto
  • 1 Avocado
  • 2 Toasted slices sourdough bread
  • Salt and pepper, to taste

How To Make:

  1. Start by bring a small nonstick pan to a medium-high heat.
  2. Crumble half the feta and spread it around the outer rim of the pan.
  3. Allow the feta to cook until it starts to crisp up and turn a golden colour.
  4. Then evenly spread half the pesto over the feta.
  5. Crack one egg in the center of the feta ring, season with salt and pepper and cook it to your liking.
  6. Repeat to prepare the other egg if you are serving two people.
  7. To serve, smash half the avocado on some toasted sourdough and top with the egg.

Chefs Tip: Replace the basil pesto with sundried tomato pesto if you prefer. Make sure to not spread the feta too far around the pan, you want the egg sides to touch the edges of the crispy feta.
