Pizza Sandwich with Feta, Bacon and Avo

Add Clover Feta and everything is better!

Serves: 4

Ingredients:

  • 1 ½ Cups self-rising flour, plus more for kneading
  • 1 cup plain Greek yogurt
  • ½ Cup Pizza sauce
  • 2 Discs Clover feta cheese, crumbled
  • 8 Bacon strips, chopped
  • Avo, to serve
  • Dressing:
  • 1 Clove garlic, minced
  • 2 Tbsp Olive oil
  • 2 Tbsp Honey
  • ½ tsp Chilli flakes
  • Salt and pepper, to taste

How To Make Pizza Sandwiches

  1. To make the dressing, add all the ingredients together and whisk to combine, season with salt and pepper.
  2. Combine the yoghurt and flour together and knead until smooth, dust with more flour if needed.
  3. Preheat the oven to 220°C and line a baking sheet.
  4. Roll out a dinner sized plate sized piece of pizza dough, about 27cm in width.
  5. Place the dough onto the baking sheet.
  6. Spread the pizza sauce onto the dough, add some bacon and crumbled feta cheese and cook in the oven for 8-10 minutes. Repeat with the remaining dough.
  7. Add avocado to half the pizza and fold in half like a sandwich.
  8. Drizzle with the dressing before serving.
