Salad Jars 3 Ways

Time to refresh your lunch for work with these tasty salad jars!

Ingredients:

  • 1 cup chickpeas, drained
  • 1 cup chopped cucumbers
  • 1 cup chopped cherry tomatoes
  • 1 cup quinoa, cooked
  • ½ cup parsley, chopped
  • 3-4 Cups rocket
  • 2 cup stock of your choice
  • Salad dressing
  • 2 Tbsp olive oil
  • 1 lemon, juiced
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup or honey
  • 1/2 tsp garlic powder
  • Salt&Pepper

How To Make Quinoa & Chickpea Salad Jar

  1. In a small bowl whisk all ingredients together. Taste and adjust seasoning if desired.
  2. In a pot over medium heat add the stock, quinoa and season. Bring to a boil and cover, then reduce the heat and simmer for 15 minutes. When the liquid is absorbed slide the pot of the heat and cover for 5 minutes until cool.
  3. To assemble the salad, evenly divide the dressing between two jars. Add chickpeas, cucumber, tomatoes, quinoa, parsley and rocket.

Ingredients:

  • 3 chicken breasts, grilled and cut into thin pieces
  • ½ tsp salt
  • ¼ tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 lemon, halved
  • 4-5 Tbsp olive oil
  • 2 cups fusilli pasta, cooked
  • 2 heads lettuce, chopped
  • ½ cup Caesar salad dressing, store-bought

How To Make Chicken Caesar Pasta Salad Jar

  1. Preheat a griddled pan over medium high heat.
  2. In a small bowl combine the salt, Italian seasoning, garlic powder and onion powder.
  3. Sprinkle the seasoning all over the chicken breasts to coat. Place the seasoned chicken on the griddled pan, cook for 5 minutes, flip then cover the pan with a lid for the chicken to cook through. Remove the chicken from the pan and set aside to cool.
  4. Squeeze the lemon on the chicken and chop into strips.
  5. Cook the pasta according to package instructions until al dente.
  6. Drain the pasta and spray or sprinkle it with olive oil to keep from clumping.
  7. Wash and chop the lettuce roughly.
  8. Start with a portion of chopped chicken followed by 1 cup of pasta and 1 cup of lettuce.
  9. Keep the dressing on the side, until ready to serve. Repeat with other jars.

Ingredients:

  • ¼ cup olive oil
  • 2 Tbsp red wine vinegar
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup Kalamata olives, pitted
  • ¼ cup crumbled feta cheese
  • 2 cups mixed greens

How To Make Mediterranean Salad Jars 

  1. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper.
  2. Pour the dressing into the bottom of the jar.
  3. Layer the cherry tomatoes, cucumber, red onion, olives, and feta cheese on top of the dressing.
  4. Top with the mixed greens, pressing them down slightly to make room for the lid.
  5. Seal the jar and store it in the refrigerator. Shake well before serving.
