
Savoury Oats with Peri-Peri Chicken Livers Recipe

Ingredients:
- 250g Oats
- 3 cups chicken stock
- 2 tbsp butter
- ¼ cup grated parmesan
- ¼ cup oil
- ½ onion, finely chopped
- 4 garlic cloves, finely chopped
- 1 tbsp smoked paprika
- 2 tsp coriander
- 2 tsp cumin
- 500g chicken livers
- 1 cup peri-peri sauce
- ½ cup cream
- ½ lemon
- Salt
- Pepper
- 2 spring onions, diagonally slice (optional)
How To Make Savoury Oats with Peri-Peri Chicken Livers
- Place the oats in a small pot and add the chicken stock.
- Simmer gently for 10-15 minutes or until oats is cooked through. Fold in the butter and parmesan, season to taste.
- Heat half the oil in a large skillet, saute the chicken livers for 2-3 minutes or until nearly cooked through.
- Remove the chicken livers from the skillet and set aside.
- Add the remaining oil to the pan.
- Add the onion and garlic and saute until soft.
- Add the spices and saute for a further minute.
- Add the peri peri sauce and cream, simmer gently until slightly thickened.
- Return the chicken livers to the pan, squeeze over some lemon juice and season to taste.
- Serve the oats topped with the chicken livers and garnish with the spring onions.
