Savoury Oats with Peri-Peri Chicken Livers Recipe

  • 250g Oats
  • 3 cups chicken stock
  • 2 tbsp butter
  • ¼ cup grated parmesan
  • ¼ cup oil
  • ½ onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 1 tbsp smoked paprika
  • 2 tsp coriander
  • 2 tsp cumin
  • 500g chicken livers
  • 1 cup peri-peri sauce
  • ½ cup cream
  • ½ lemon
  • Salt
  • Pepper
  • 2 spring onions, diagonally slice (optional)

How To Make Savoury Oats with Peri-Peri Chicken Livers

  1. Place the oats in a small pot and add the chicken stock.
  2. Simmer gently for 10-15 minutes or until oats is cooked through. Fold in the butter and parmesan, season to taste.
  3. Heat half the oil in a large skillet, saute the chicken livers for 2-3 minutes or until nearly cooked through.
  4. Remove the chicken livers from the skillet and set aside.
  5. Add the remaining oil to the pan.
  6. Add the onion and garlic and saute until soft.
  7. Add the spices and saute for a further minute.
  8. Add the peri peri sauce and cream, simmer gently until slightly thickened.
  9. Return the chicken livers to the pan, squeeze over some lemon juice and season to taste.
  10. Serve the oats topped with the chicken livers and garnish with the spring onions.
