Souffle Omelette with Feta and Sundried Tomato

Change up your boring breakfast with this light, fluffy and delicious omelette with Clover Feta Cheese!

  • 3 Eggs
  • 1 Tbsp Chopped sundried tomato
  • 1 Disc Clover Feta cheese, plain
  • 1 Tbsp Olive oil
  • Salt and pepper, to taste
  • Wild rocket, to serve
  • Balsamic glaze, to serve

How To Make Souffle Omelette

  1. Separate your eggs into two mixing bowls.
  2. Whisk the egg whites to a stiff peak, beat the egg yolks and then fold them together until just combined.
  3. Bring a non-stick pan to a medium heat. Add the oil and the fluffy egg mixture to the pan and allow to cook for 3-4 minutes.
  4. Add the sundried tomato, crumble the feta over and season with salt and pepper.
  5. Fold the omelette in half and allow to cook for another 3 minutes until cooked through.
  6. Serve the omelette topped with wild rocket and drizzle with balsamic glaze.
