Recipe by: Nicole Snelling Ingredients:3 Eggs1 Tbsp Chopped sundried tomato 1 Disc Clover Feta cheese, plain 1 Tbsp Olive oil Salt and pepper, to taste Wild rocket, to serveBalsamic glaze, to serve How To Make Souffle OmeletteSeparate your eggs into two mixing bowls.Whisk the egg whites to a stiff peak, beat the egg yolks and then fold them together until just combined.Bring a non-stick pan to a medium heat. Add the oil and the fluffy egg mixture to the pan and allow to cook for 3-4 minutes.Add the sundried tomato, crumble the feta over and season with salt and pepper.Fold the omelette in half and allow to cook for another 3 minutes until cooked through.Serve the omelette topped with wild rocket and drizzle with balsamic glaze.
