Spicy Marinated Tomato and Feta

Perfect with your favourite salad, toasted bread or grilled meats.

Ingredients:

  • 2 cups cherry tomatoes, halved
  • 1 – 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 2 springs rosemary
  • 2 chopped chilies
  • 2 garlic cloves, minced
  • 2 tsp mixed herbs
  • salt & pepper

How To Make Marinated Tomato & Feta

  1. In a large bowl, combine the halved tomatoes with a pinch of salt and pepper, set aside to allow the tomatoes to release some of their juices.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, garlic, chilies, and dried mixed herbs. Adjust seasoning as needed.
  3. Pour the marinade over the tomatoes and gently toss to combine. Add the crumbled feta cheese and mix carefully to avoid breaking the feta.
  4. Let the mixture sit for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator before serving, give it a good stir and serve with crusty bread & fresh basil.
