Taco Bowl

For your meal prep Monday, whip up these fresh, delicious taco bowls, portioned and ready to grab and go!

Preparation time: 12 – 15 minutes
Cooking time: 20 – 30 minutes

Ingredients:

  • 400g ground beef or chicken mince
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • salt, and pepper
  • 2 cups cooked rice
  • 1 can black beans or kidney beans, drained and rinsed
  • 2 ½ cups corn kernels
  • 1-2 tomatoes, diced
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 2 cups lettuce, shredded

To serve:
Salsa
Guacamole

How To Make a Taco Bowl

  1. In a pan, brown the ground beef or chicken mince over medium heat.
  2. Drain excess fat if needed.
  3. Add all the spices and a little water.
  4. Simmer for a few minutes until well mixed and flavourful.
  5. To build your bowl, layer the cooked rice, seasoned protein, beans, corn, add fresh toppings like tomatoes, and shredded lettuce.
  6. Add shredded cheese, sour cream or salsa if desired.
