Taco Bowl
For your meal prep Monday, whip up these fresh, delicious taco bowls, portioned and ready to grab and go!

Preparation time: 12 – 15 minutes
Cooking time: 20 – 30 minutes
Ingredients:
- 400g ground beef or chicken mince
- 2 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- salt, and pepper
- 2 cups cooked rice
- 1 can black beans or kidney beans, drained and rinsed
- 2 ½ cups corn kernels
- 1-2 tomatoes, diced
- 1 cup shredded cheese
- 1 cup sour cream
- 2 cups lettuce, shredded
To serve:
Salsa
Guacamole
How To Make a Taco Bowl
- In a pan, brown the ground beef or chicken mince over medium heat.
- Drain excess fat if needed.
- Add all the spices and a little water.
- Simmer for a few minutes until well mixed and flavourful.
- To build your bowl, layer the cooked rice, seasoned protein, beans, corn, add fresh toppings like tomatoes, and shredded lettuce.
- Add shredded cheese, sour cream or salsa if desired.
