Tofeta Salad

What do you get when you cross Tofu and Feta, together as one? The answer is Tofeta!

Serves: 3-4
Time: 10 minutes

Ingredients:

For the Tofeta
1 block of firm Tofu
1 tbsp salt flakes
¼ cup olive oil
Juice of 1 lemon
1 sprig rosemary or 1 tbsp dried
Few sprigs fresh thyme or 1 tbsp dried
1 tsp dried oregano

For the salad
2 -3 Feta discs, broken into large chunks
1 small cucumber, chopped
1 cup cherry tomatoes, halved
½ cup pitted olives
1 pack Fresh Rocket

Method:

Drain excess liquid from the tofu and pat dry. Place the salt, olive oil, lemon and herbs into a sterilized jar. Add in the tofu, close the jar and gently shake. Allow to stand for a few minutes.

Assemble the salad ingredients on a platter, add the tofeta and drizzle over the excess oil from the jar.

Exclude the feta cheese if vegan.

Chefs Tip:

If you are vegan, you can exclude the feta cheese from this recipe

Whats great about using Tofu is that it absorbs the flavours and it’s a great plant based protein

The longer the Tofeta stays refrigerated in the jar in, the more intense the flavour becomes
