Traditional Turkish Künefe
If you love a dessert with drama, then you will adore this!
Ingredients:
Syrup:
- 2 cups (400 g) granulated sugar
- 2 cups (470 ml) water
- 1 tablespoon (15 ml) freshly squeezed lemon juice
For greasing the pan:
- 4 tablespoons (60 g) unsalted butter, softened
- 1 tablespoon (15 ml) grape molasses
Pastry:
- 1 pound (454 g) Kadayıf (kataifi), shredded phyllo
- 1 cup (227 g) unsalted butter, melted
- 10 ounces (283 g) unsalted, stretchy Turkish cheese or mozzarella
Garnish:
- Finely ground pistachios
How To Make Traditional Turkish Künefe
- Combine sugar and water in a pot and bring to a boil.
- Reduce to a simmer for 10 minutes until slightly thickened.
- Add lemon juice and simmer 1–2 minutes more.
- Remove from heat and cool completely.
- Mix softened butter and grape molasses.
- Generously grease 4–6 individual pans or one large pan with half the mixture.
- Roughly chop the kadayıf into 1-inch pieces.
- Place in a bowl and pour melted butter over the top.
- Toss well to coat.
- Press a layer of kadayıf into the bottom and sides of the pan.
- Add a layer of cheese, leaving a small border.
- Cover with another layer of kadayıf and press firmly to seal.
- Place the pan over medium-low heat and cook for about 6 minutes until the bottom is golden.
- Flip the künefe onto a plate.
- Re-grease the pan with the remaining molasses-butter mixture.
- Return the pastry to the pan, golden side up.
- Cook for another 4–5 minutes until the bottom is golden.
- Remove from heat and immediately pour cooled syrup over the hot pastry.
- Garnish with ground pistachios and serve hot so the cheese remains melted and stretchy.
