Traditional Turkish Menemen
This colourful Turkish dish is warm, comforting and full of flavour, and it has been enjoyed in Turkish homes for generations!
Ingredients:
- 2 tablespoons extra virgin olive oil
- 1 medium yellow onion, chopped
- 1 green bell pepper (Anaheim or Holland peppers also work), cored, seeded and chopped
- Kosher salt
- 2 vine-ripe tomatoes, chopped
- 3 tablespoons tomato paste
- Black pepper
- ½ teaspoon dried oregano
- 1 teaspoon Aleppo pepper, plus extra for serving
- 4 large eggs, beaten
- Crushed red pepper flakes (optional for heat)
- Thick slices of French baguette (optional, for serving)
How To Make Traditional Turkish Menemen
- In a 10-inch skillet, heat the olive oil over medium heat.
- Add the onions and peppers, season with kosher salt, and cook for 4 to 5 minutes, stirring often until softened but not browned.
- Add the tomatoes and tomato paste.
- Season with more kosher salt, black pepper, oregano and Aleppo pepper.
- Cook for 5 to 7 minutes, stirring occasionally, until the tomatoes soften but keep their shape.
- Push the tomato mixture to one side of the pan.
- Lower the heat to medium-low.
- Add the beaten eggs and cook gently, stirring as needed until just set.
- Fold the tomato mixture into the eggs.
- Finish with a drizzle of olive oil and a sprinkle of Aleppo pepper or crushed red pepper flakes if you like heat.
- Serve immediately with thick slices of bread.
