Turkish Tantuni
Sizzle, spice, and everything nice that’s tantuni!

Ingredients:
Meat Filling:
- 450–500 g beef (or chicken), finely diced
- 2 tbsp vegetable oil
- 1–1.5 cups water
- 1 tsp sweet paprika
- Salt to taste
Flatbread (Lavash):
- 500 g flour
- 275 ml water
- 1 tsp sugar
- 1 tsp salt
- (Optional: drizzle of oil or butter)
Garnishes:
- 1 onion
- Pinch of salt
- 1 tsp sumac
- 2 tomatoes
- Fresh parsley
- Lemon wedges
To Serve:
- Ayran (yogurt, water, salt, ice)
How To Make Turkish Tantuni
- Meat Filling:
- Finely dice the meat into small pieces.
- Heat oil in a pan and sauté the meat until browned.
- Add water, cover and simmer for 20–30 minutes until tender, adding more water if needed.
- Season with paprika and salt.
- Flatbread:
- In a bowl, mix flour, sugar, salt and water.
- Knead into a soft dough.
- Divide into small balls and rest for 10–15 minutes.
- Roll into thin circles and cook in a hot pan for about 30 seconds per side until lightly browned.
- Garnishes:
- Thinly slice the onion and rinse to reduce sharpness.
- Mix with salt and sumac.
- Dice the tomatoes and chop the parsley.
- Assemble:
- Warm the flatbread and lightly brush with the meat juices.
- Add the meat filling.
- Top with onions, tomatoes and parsley.
- Squeeze over fresh lemon juice.
- Roll tightly into a wrap.
