Vegetables with Creamy Mint Whipped Feta

The perfect side dish to serve alongside your favourite roasts or dinner meats!

 

Ingredients:

  • 1 butternut, peeled & cube
  • 2 medium carrots , peeled and cut into chunks
  • 2 red onions, cut into wedges
  • 1 green or red pepper, cut into chunks
  • 50pg baby potatoes, halved
  • 2 Tbsp olive oil
  • 2 tsp mixed herbs
  • Salt & pepper, to taste

For the creamy mint whipped feta:

  • 150g feta cheese
  • 100g double thick plain yoghurt
  • 2 Tbsp fresh mint, chopped
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice and zest

To serve:

  • Pistachio nuts, chopped
  • Fresh mint leaves
  • Pita breads or flat breads

How To Make Vegetables with Creamy Mint Whipped
Feta

  1. Preheat oven to 200°C, line a baking tray with baking paper.
  2. Place all the vegetables in a large mixing bowl along with the rest of the ingredients, toss until coated then spread out the vegetables in a single layer of the prepared baking tray
    and roast for 30 – 40 minutes, flipping halfway through.
  3. For the whipped feta: Add all ingredients into a food processor and blitz until smooth and creamy.
  4. Spread the whipped feta on a serving plate or platter.
  5. Top with the warm roasted vegetables.
  6. Garnish with chopped nuts and serve with pita bread or flat breads.
