Mango and coconut paletas
Ingredients:
4 ripe & ready mangoes, flesh removed
400ml coconut milk
1 lime, zested and juiced
1T brown sugar alternative
Method:
Add the ingredients to a blender and blend until smooth. Using Woolies plain paper cups, pour the mixture into the cups filling them up half way. Place them in the freezer for 3 hours. After the 3 hours add a wooden spoon to each cup with the handle facing up. Setting it for 3 hours before adding the spoon will allow the spoon to stand upright.
Return to the freezer and freeze until solid. Before serving simply potpie paletas out of the cup and enjoy.
Watermelon, mint and honey paletas
Ingredients:
1 seedless watermelon, flesh cubed
20g mint
4T honey
1/2t salt
50g spinach
Method:
Add the watermelon, mint and honey to a blender and blend until smooth. Using Woolies green paper cups, divide the mixture between the 6 cups leaving a quarter of the mixture behind.
Add the spinach to the remaining mixture and blend until smooth. Carefully pour the green watermelon mixture over the mixture already in the cup. Set in the freezer for 3 hours before adding wooden spoons to the cup and freezing until completely frozen.
Pop the paletas out of the cups before serving.
